I did, unfortunatly they where actually had a point this time and the new name did sound better and covered the concept better then the last.

I can't seem to create a page break in the TOC. I have gathered that I should use the 'Page Break' options for each header, but however I set them 'New Page', 'New Odd Page' or 'None', the result is the same; no page breaks are used.

What could I be doing wrong?

It seems the line in the TOC isn't generated, but a fix text. If so you just have to delate it from your manual template (and if desired save it as another template).
