I want to change the default text in the ftsearch.htm menu from the default black to white in my Webhelp output. How do you do that?

You would need to edit the HTML page template for the search page to do this. The template is located in Configuration > Publishing Options > WebHelp > Full Text Search. It is in your project if you are not using a skin and in the .hmskin project file if you are using a skin. If you are using a skin. If you are using a skin, what you need to edit and how and where you edit it also depends to a great extent on the skin you are using. There are very large differences between individual skins.
